- Make the sauce: In a small bowl, whisk the ingredients until combined. Refrigerate until use.
- Make a burger: In a large skillet over medium heat, heat 1 tablespoon of oil. Add onion and cook, stirring often, until beginning to soften. Reduce heat to medium-low and continue to cook, stirring often, until golden brown and jam-like, 45 to 60 minutes. Transfer to a plate and wipe out the pan.
- Add the remaining 1 tablespoon of oil to the skillet and heat over medium-high heat. Cook the patty for 2 to 3 minutes on each side, or until it reaches the desired doneness.
- Cover bread with sauce. Add the galette, cheese and a large spoonful of caramelized onions. Let the cheese melt. Add bacon, lettuce and tomato. Garnish with bun.
