Paramore has pledged to donate a portion of its concert ticket sales to a vegan charity fighting food insecurity and climate change*.

The iconic rock band revealed their US tour dates last week, as well as their partnership with the Support + Feed initiative.

Run by Billie Eilish’s mother, Maggie Baird, Support + Feed initially began helping those most vulnerable during the Covid pandemic, as well as helping vegan restaurants in Los Angeles.

However, the charity has since expanded across the United States and broadened its mission to address food insecurity – particularly in BIPOC and other communities.

“Thank you Paramore for supporting your local communities!” the charity wrote online.

Last year, Paramore lead singer Hayley Williams baked vegan chocolate chip cookies to donate to Support + Feed.

The star also went live on Instagram with Baird to discuss her experience with plant-based foods.

“It’s such a journey that I’ve been through ups and downs with it,” she said.

“Now I’m 32 and in Nashville there’s more vegan awareness [and] more vegan restaurants in town…

“I was able to get a lot of education and learn how it affects our economy and how sustainable it is to eat without eating meat. [But] I’m still learning about this.

Carrot bacon is part of a spring meal that Mollen serves with watermelon radish, cucumber and carrot flower garden, raspberry parfait bites, daisy eggs and dye-free M&Ms, which can be purchased at a health food store and online.

For 4 people

Ingredients:-

  • 2 carrots
  • 1 tablespoon pure maple syrup
  • 1 1/2 teaspoons coconut aminos or soy sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly cracked black pepper

Method:-

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Thinly slice the carrots using a mandolin.
  • In a deep plate, combine maple syrup, coconut aminos, garlic powder, onion powder, smoked paprika, salt and pepper.
  • Add the carrot slices and toss to coat.
  • Place the carrot slices on the prepared baking sheet, laying them flat and making sure no pieces overlap. Bake until crispy, 10 to 15 minutes, flipping the slices halfway through cooking.

When I stopped buying cow’s milk, I was spending about $5 a liter on natural cashew milk from my grocery store in Rio de Janeiro. That’s the equivalent of nearly $20 a gallon. As I leaned more towards a plant-based diet and used the milk in oatmeal, smoothies, soups and stews, the cost quickly increased.

To save money, I started testing the nut and seed milk recipes in Amy Chaplin’s “Whole Food Cooking Every Day.” Chaplin soaks most nuts and seeds in water for six to 12 hours (macadamia nuts, cashews, and hemp seeds do not require soaking). Then she rinses them, mixes them with filtered water, and strains the milk using a thin tea towel, cheesecloth, or nut milk bag.

It takes less than five minutes and the variations are endless: I’ve made hazelnut milk, sesame seed milk, even pumpkin seed milk. I buy the nuts and seeds in bulk and store them in my freezer for even more savings. The milks stay fresh for four or five days, and the flavors are cleaner and fresher than anything I’ve bought from the stores.

I settled into a routine of making batches of almond milk and cashew milk each week. I don’t bother straining cashew milk, which is naturally smooth. If I use the almond milk for smoothies, oatmeal, or chia seed pudding, I also leave it unfiltered. But when I want a creamy almond milk, I have to strain it, which leaves me with leftover ground almonds. To reduce food waste, I’ve tried using them in granola, muffins, and cakes. These recipes all required way too much work and way too many dishes.

I was already making almond milk from scratch. I wanted something simpler.

I found a perfect fit by signing up for Chef Tati Lund’s online course on vegan cooking. Lund runs Org Bistro, a vegan restaurant in Rio de Janeiro serving bright platters of quinoa croquettes and fresh salads adorned with edible flowers. She taught me how to turn my leftover almond pulp into soft vegan cheese in minutes.

It’s an infinitely customizable recipe: his version combines the pulp with olive oil, salt, black pepper, dried oregano and miso paste or lime juice. The cheese can be served immediately, although the flavor will deepen and the texture will firm up after about eight hours in the fridge.

My favorite version uses apple cider vinegar, garlic powder, and smoked paprika. The pulp can be enhanced with finely grated beets for a bright pink result, turmeric for a bright yellow or finely chopped herbs for a flecked green. It makes a simple snack when paired with crackers, cucumber slices or slivered carrots. I use it in a spoonful on a slice of toasted sourdough or as a spread in veggie sandwiches.

The best: to prepare it, no additional dishes are necessary.

Equipment: You must have a powerful blender to do this.

AHEAD: Almonds should be soaked at least 8 hours ahead of time. Cheese tastes best after being refrigerated for at least 8 hours.

Refrigerate cheese for up to 7 days. Refrigerate almond milk for up to 5 days.

  • 1 cup (5 ounces) raw almonds, soaked for 8 hours or up to overnight, rinsed and drained
  • 4 cups filtered water at room temperature
  • 3 tablespoons extra virgin olive oil, plus more if needed
  • 2 tablespoons nutritional yeast (optional)
  • 1 tablespoon apple cider vinegar
  • 11/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon fine salt, more if needed
  • 3/4 teaspoon dried herbs, such as oregano, basil or rosemary
  • Toast, crackers, rice cakes, or sliced ​​vegetables, such as cucumbers and carrots, for serving

Place a bag of nut milk, cheesecloth, or a very thin kitchen towel over a large, fine-mesh strainer. Place the lined colander over a large bowl.

In a high-powered blender, combine the soaked almonds and water. Blend on high speed until creamy, 1 to 2 minutes.

Pour the milk into the lined colander. Bring the corners of the fabric together, lift and firmly squeeze the milk into the bowl. Pour the almond milk into a jar or bottle, using a spoon to scoop up any leftover froth to add to the jar or bottle, cover and refrigerate until needed. Use in beverages, oats, cereals, sauces and more. The milk will separate after a few hours; shake before serving.

Rinse and dry the bowl. Add the almond pulp (you should have about 1 1/3 cups), oil, nutritional yeast, if using, vinegar, paprika, garlic powder and salt. Stir until the paprika is evenly distributed and the cheese can easily be formed into a ball, adding more olive oil if the cheese seems dry. Taste and season with more salt, if needed.

Place the almond cheese on a piece of parchment paper and use your hands to flatten it into a thick disc or roll it into a log. Sprinkle the dried oregano on top, then press it onto the surface. Almond cheese can be served immediately but tastes best after being refrigerated for 8 hours.

Serve as a spread with toast, crackers, rice cakes or sliced ​​vegetables.

California-based vegan seafood startup Impact Food recently secured $500,000 to help build a more sustainable food system, starting with sushi-grade raw vegan bluefin tuna. By doubling down on developing the right seafood flavor, texture and experience, the Impact Food team hopes to provide a solution to save the ocean’s most vulnerable animal populations.

Founded in 2021 by University of California, Berkeley graduates Kelly Pan, Stephanie Claudino Daffara and Adrian Miranda, Impact Food is driven to create new solutions to build a more sustainable and resilient food system. By combining their knowledge of food science, molecular biology and business, the team’s mission is to provide a sustainable solution using plants, but without compromising the flavor of seafood.

“We decided to start with a whole, vegan alternative to tuna because tuna is both the most consumed fish in the world and one of the most endangered animal species in the world,” said Kelly Pan, co-founder of ‘Impact Food, at VegNews. “Bluefin tuna is known for its delicate texture and subtle oceanic flavor that is perfect for popular dishes like sushi. It is also an apex predator that helps maintain the health of our oceans.

Save the oceans with plant-based seafood

Impact Food believes that plant-based seafood is the solution to restoring and maintaining healthy ocean ecosystems. Unlike conventional animal-based seafood, vegan alternatives do not contribute to common seafood sustainability issues, such as overfishing, pollution, and bycatch. According to the Food and Agriculture Organization of the United Nations, 90% of fish stocks are currently fully exploited or overexploited. Additionally, fish cultured in aquaculture systems require an unsustainable amount of land and resources to produce and feed them.

The Pacific bluefin tuna, in particular, is currently listed as “near threatened” by the International Union for Conservation of Nature with a declining population. With its plant-based Impact Tuna, Impact Food hopes to ease the burden on our oceans and specifically the Pacific bluefin tuna stock. “Due to the growing global demand for seafood, overfishing has continued to decimate the tuna population at an alarming rate,” Pan said. “We have created a delicious plant-based tuna so that fish stocks can finally recover from decades of ecological damage and tuna can continue to restore balance to our marine ecosystems. Impact Food’s Vegan Tuna is designed to provide the same nutritional content as conventional seafood and is made with three key ingredients: pea protein with all nine essential amino acids, seaweed for omega-3 fatty acids and beet juice for a natural red color while also providing potassium and other healthy minerals.

Impact Food has also developed an exclusive system to recreate the unique meaty texture of tuna. “We’ve developed a new texturing process that transforms our proprietary blend of protein and algae-derived ingredients into the complex, fibrous texture of whole seafood,” Pan said. “This allows our all-plant, sushi-grade raw tuna to deliver the consumer the melt-in-the-mouth sensation of meaty tuna, in addition to nutrient-rich protein and the taste of the sea in every bite.”

Putting vegan tuna on the market

Thanks to Impact Food’s recent angel funding round, made possible by investors including the Ahimsa Foundation, Future Food Fund (Japan), Serpentine Ventures, George Sobek and Pierre Jouve, the startup can move forward with the commercial launch of its first product. The startup’s product roadmap will include additional seafood products, such as shellfish. Later this year, Impact Food plans to develop and execute its pilot production plans. Previously, the company built its research lab in KitchenTown, a food innovation lab in San Mateo, Calif., with support from food science and strategy advisors.

Starting early next year, Impact Food plans to introduce its Impact Tuna at select restaurants and catering partners in the United States and Japan, followed by a mass market launch by the end of 2023. .

VFC, aka Vegan Fried Chick*n, started like all good inventions – by accident and intuition.

When the pandemic hit two and a half years ago, restaurants in York, England were closed and co-founder Matthew Glover was left without vegan fried chicken and fries (chips). Not one to sit down without his favorite food, the entrepreneur has become acquainted with restaurant owners, including chef and restaurateur Adam Cross. Cross eventually shipped a box of frozen treats to Glover, who shared the chicken, fries, coleslaw and plant-based barbecue sauce with friends and family — and it was a hit.

Several months later, in December 2020, the couple co-founded VFC, launching a direct-to-consumer product. Their goal is not to target restaurants, but large-scale retail and catering. With a “bit” of traction now in the UK (with listings at two of the island’s two largest retailers), Cross and Glover have turned their attention to the US market. Why You Should Care About Vegan Chicken

VFC chicken products are marketed as grocery staples similar in taste and packaging to typical frozen meat products, but with a very different mission than Tyson or Eckrich Farms. For VFC, it is a “rebellion against a system that has brought us climate change, environmental destruction, factory farming and slaughterhouses”.

Glover credits his wife Jane Land with much of the troll killing, wielding unjudgmental British sarcasm like a knight in line fighting monsters under a bridge. This back-and-forth led to an incredible 6% engagement across social media channels, creating a loyal customer base for the new business.

“It’s so unique in the category — the tone of voice, the packaging, and the fun conversation. To have that with a retailer is so different, and people appreciate that,” Bowlin said.
