California-based company Mill It claims to have created the first-ever buttermilk and buttermilk dressings, made from the ancient grains of sorghum and millet.

Mill It initially received funding from Kern Venture Group, with a seed round of $765,000, with additional funding coming from Ariel Savannah Angel Partners, Tech Coast Angels and Santa Barbara Angel Alliance. Mill It founders, Bill and Scott Myers, have been in the food development business for over 30 years, working with companies such as Keurig Green Mountain, Lite House and Califia Farms.

Just three months after the official launch of Mill It, Whole Foods Market stocked shelves at its 300 locations across the United States with the brand’s buttermilk products.

Regarding ancient grains, the brand states: “As a crop, these grains are resistant to drought and extreme weather conditions. They require less fertilizer and water than soybeans and almonds and offer high yields. They are relatively easy to grow, generate low runoff contamination and have a reduced risk of crop damage.

“Using our patented formulation, we’ve engineered the first-ever plant-based buttermilk and plant-based buttermilk dressings that match the taste, texture and consistency of dairy products, while being micronutrient-rich and hypoallergenic. .”
