There comes a time in the day when you just need something sweet. Usually this happens around the same time you crave coffee. This chewy Snickers bar-shaped recipe is the perfect healthy snack to satisfy energy cravings and dips – and it’s super simple.

These hazelnut bars are packed with plant-based protein, slow-release energy, and gut-loving fiber, making them the perfect pre-workout snack, breakfast bar, or sweet pud. Opt for 85% cocoa chocolate when making the chocolate layer if you want to reduce the sugar and increase the antioxidant profile.

Caramel layer

175g of pitted dates, soaked in hot water and then drained

2 tablespoons of peanut butter

1 tsp of vanilla extract

1 teaspoon of salt

Layer of nougat

75g oatmeal

3 tablespoons of caramel

Other

40g salted peanuts

100g dark chocolate, melted

Mix all the ingredients for the caramel together in a food processor until thick and smooth.

Put the ‘caramel’ date in a bowl, making sure to scrape the sides well to avoid losing some of the mixture.

Add the mixed oatmeal in a food processor (no need to rinse) with three tablespoons of caramel and mix until well combined. The resulting nougat mixture should resemble a sticky dough.

Line a cake mold with baking paper and firmly press the nougat dough into the bottom.

Spread the remaining date caramel on the nougat.

Sprinkle the peanuts evenly on top, pressing them into the caramel so that they stick.

Put the mold in the freezer for about an hour.

Once frozen, remove the tin and using a sharp knife, cut into bar-sized pieces.

To melt chocolate breaking it into pieces and placing it in a bowl. Put this bowl in a pot of boiling water.

Place a large sheet of baking paper on a plate.

Once melted, dip each bar in liquid chocolate and place it on the paper.

Put the bars back in the freezer once covered for another 30 minutes.

Place in an airtight container. They will last up to three weeks!
