Snickers High Protein Rice Cake Bar Recipe

You had me at Snickers! Take some basic ingredients that you may already have in your kitchen and prepare them protein-rich snickers rice cake bars, shared by @danishealthyeats. Creamy, protein-rich peanut butter is layered between crispy rice cakes and topped with a layer of chocolate. Sounds amazing, doesn’t it? You can make them vegan by using plant protein powder and Trader Joe’s chocolate chips.

High Protein Snickers Rice Cake Bars


  • 6 rice cakes (like Trader Joe’s)
  • 1/4 cup natural peanut butter (creamy or crunchy)
  • 1 to 3 tablespoons of maple syrup
  • 1 to 2 tablespoons protein powder (like Orgain)
  • 1 1/4 cup chocolate chips

In a small bowl, combine peanut butter, maple syrup and protein powder, until desired smoothness. The caption read, “You want it thicker than caramel, but not dry like batter,” so it doesn’t ooze down the sides as you stack the rice cakes.

Spread the protein-rich nut butter on one rice cake, add another rice cake, spread more nut butter, and add a third rice cake. Repeat for two bars.

For the coating, melt the chocolate in a separate small dish in the microwave until smooth. Dip peanut butter rice cake bars in melted chocolate, coating completely. If you want less chocolate, you can just drizzle it over the top. Optional: sprinkle the tops with a little fleur de sel. Place both bars on a parchment-lined cookie sheet or plate. Freeze for 10 minutes, then enjoy the chocolatey, nutty, crunchy goodness!
